Menu Plan Monday

Today's been and is going to be pretty hectic. As always I did nothing on Sunday (Sunday's are for rest, just ask God. ;) ), and I have a destroyed house to contend with today. The end of the day I will be taking the kiddos back to vacation bible school and helping to serve the kids snacks. We'll get home around 9, then it's bathtime and bedtime for the kids, and maybe mom too. I want to do some reading, I haven't read anything in a couple of weeks. I've just been so tired at the end of the day, it seems like the only thing I want to do is crash and sleep.

L-Veggie soup/crackers/bananas
D-Italian chicken pasta/homemade breadsticks/brownies

L-Bologna sandwich/pineapple
D-Creamy broccli cheese soup/homemade bread

B: Pancakes
L:Spaghetti/cheese toast/pineapple
D: Cheese & onion frittata/green beans

B: Pumpkin butterscotch muffins
L: Corn dogs/peas/peaches
D: Salmon/corn on cob/cheesy rice

B: Overnight cinnamon rolls
L: Out w/ dad
D: Taco soup/cheese quesadillas/peaches

B: Eggs/homemade biscuits/gravy/bacon
L: Grilled cheese/tomato soup
D: Chicken stroganoff/lima beans/mashed taters

B: Cereal
L: Out w/ grandpa
D: Tacos/ beans & rice

My chicken stroganoff:
4 chicken breasts, shredded
2 cans cream of mushroom soup
1 can sliced mushrooms
1 large onion, halved then sliced
1tbsp chopped garlic
1/2c sour cream

Cook onion & garlic in a bit of oil until soft and translucent, add in mushrooms and chicken, heat through. Add cream of mushroom soup, heat through. Turn off heat and stir in the sour cream, add salt and pepper to taste. Serve over egg noodles, rice or mashed potatoes.

My taco soup:
2 cans diced tomatoes
1 can tomato sauce
2 cans either chili, kidney or black beans
2c either shredded chicken or cooked hamburger meat
2c chicken stock (maybe a little more)
1 diced onion
1 tbsp chopped garlic
1 diced bell pepper
1 seeded and diced jalapeno
1 packet taco seasoning mix, or 1 heaping tbsp homemade
1/2 can of corn

Saute onion, bell pepper, jalapeno and garlic til tender in big soup pot. Add your meat and heat through. Add your beans, corn, tomatoes, tomato sauce, corn, chicken stock and taco seasoning. Simmer for about 15 minutes. If it seems kinda thin, you can add some leftover rice to it. I like to serve this with cheese quesadillas.

2c flour
2c sugar
2/3 c cocoa
2 sticks melted margarine (or 1c)
2 eggs, beaten
1/2c chocolate chips

Mix dry ingredients. Add melted margarine, combine. Add beaten eggs combine. Fold in chocolate chips. Spread in 9x13 pan and bake 350, for about 20-25 minutes.
